Lo~Fat Cherries Jubilee

1 ~ 1/4 cups cold fat free milk
1/2 teaspoon almond extract, divided
1 package  { 4 ~ serving size } JELL ~ O Vanilla Flavor; Instant Reduced Calorie Pudding & Pie Filling
1 cup thawed COOL WHIP LITE Whipped Topping
2 Tablespoons toasted Slivered Almonds, chopped, divided
1 can  { 21 ounce } light cherry pie filling

POUR milk and 1/4 tsp. of the extract into large bowl. Add pudding mix. Beat with wire whisk 2 minutes or until well blended.

STIR in whipped topping and 1 Tbsp. of the almonds. Mix cherry pie filling and remaining 1/4 tsp. extract. Spoon pudding mixture and pie filling alternately into 8 dessert glasses.

REFRIGERATE until ready to serve. Garnish with remaining almonds.  

 
Cool Pear Salad

1 can { 15 ounce } sliced pears in light syrup, un ~ drained
2 cup boiling water
1 package { 8 ounce serving size } Jell ~ o lime flavor gelatin
1 tablespoon lemon juice
6 ounce cream cheese, softened
1/8 teaspoon ground cinnamon

DRAIN pears, reserving syrup; set aside.
STIR boiling water into gelatin in medium bowl at least 2 minutes until completely dissolved. Stir in reserved syrup and lemon juice. Pour 1 1/2 cups gelatin mixture into 8 x 4 ~ inch loaf pan or 8 ~ cup mold sprayed with cooking spray. Refrigerate about 1 hour or until set but not firm.

BEAT remaining gelatin mixture gradually into cream cheese until smooth. Stir in pears and cinnamon. Spoon over clear gelatin in pan.
REFRIGERATE 4 hours or until firm. Turn out of pan. Cut into slices to serve. Store leftover gelatin mold in refrigerator. Serves 6 to 8.
